My favorite cold and flu fighter. Fight the virus and speed up recovery time. This is a folk remedy with scientific backing. Not only is it a potent antiviral with immune stimulating properties, it tastes delicious, and is safe for children as well! If you are not into harvesting it yourself, you can find ready made products in health food and some grocery stores.
I collect the berries in early September, though it’s a challenge beating the bird and bears. When I do find a good patch, I make sure to harvest sustainably, and leave some for my furry and feathered friends. I prefer to pick the berries and dehydrate, rather then preparing them right away. I find they take up less space, and store longer this way. When I am feeling run down, I simply follow this recipe.
Yield: 2 cups Prep time: 5 minutes
Cook time: 1 hour
1/2 cup dried elderberries
4 cups of water
2 tablespoons grated ginger
Unpasteurized honey, to taste*
*never add honey to boiling water, you will destroy its therapeutic effect. Wait until your tea has cooled down enough for you to drink, then add the honey.
Add water, elderberries and ginger to a pot.
Bring to a boil, then simmer the mixture for 1 hour.
Add honey to taste.
Extra – freshly squeezed lemon also goes well in this drink.
